We ran this at a backyard pop-up with a tiny oven and a lot of hungry people. The Thai peanut pizza sold out first, the line doubled, and the DMs the next day were just “that sauce.” You don’t need a pop-up to pull it off. You just need Tangy Thai and a sheet pan.

Ingredients (makes 2 small pizzas)
2 naan or small flatbreads
4 Tbsp Tangy Thai peanut sauce (2 per pizza)
1 cup shredded mozzarella
1 cup cooked shredded chicken (or tofu for veg)
½ cup carrot, cut into thin matchsticks
¼ cup red bell pepper, finely diced
2 Tbsp cilantro, chopped
Optional finishers: sliced scallions, lime wedges, toasted sesame, crushed peanuts, chili flakes

Directions
Heat the oven to 375°F / 190°C. Place a rack in the top third.
Sauce the base. Spread 2 Tbsp Tangy Thai on each naan.
Layer it. Mozzarella first, then chicken (or tofu), carrot, red pepper.
Bake 8–10 minutes until cheese is melted and edges crisp.
Finish like a pro. Shower with cilantro. Add scallions, sesame, or crushed peanuts if you like. Squeeze lime over the top. Slice and serve immediately.
Pro move: For a glossier, drippier finish, whisk 1 extra Tbsp Tangy Thai with a splash of warm water and drizzle after baking.
