Quick onions: 1 large onion (thinly sliced), 1 Tbsp oil, 2 Tbsp Zesty Red, 1 tsp vinegar, pinch of salt

Swap beef for smashed turkey or a plant-based patty; just keep the patties thin.

Directions

Make ketchup butter. Gently melt butter and whisk in Zesty Red with a pinch of salt.

Quick-candy the onions. Sauté onions in oil over medium-high 4–6 minutes until soft and a little browned. Add Zesty Red and vinegar; cook 1–2 minutes until glossy.

Smash and sear. Divide beef into 8 loose balls. Heat a cast-iron pan until ripping hot. Add two balls, smash hard under a spatula (use parchment between spatula and meat) until very thin. Season lightly with salt and sear 60–90 seconds.

Paint with ketchup butter. Brush patties, flip, top with cheese, and cook 30–45 seconds until edges are lacy and cheese melts.

Stack. Double up patties on toasted buns. Pile on quick onions, pickles, lettuce, and a stripe of Zesty Red. Serve immediately.
